2 lbs. sole (other skinless fillets can be substituted) 2 tbsp. lemon juice 1/2 c. grated Parmesan or Romano cheese 1/2 stick butter, softened 2/3 c. mayonnaise 3 tbsp. chopped green onion 2 tbsp. parsley or dill Place fish in a single layer in a flat baking dish. Brush with lemon juice and let stand 10 minutes. Combine remaining ingredients. Broil fish approximately 4 inches from heat for 6 to 8 minutes until fish flakes easily. Pour off remaining lemon juice. Remove from broiler and spread cheese mixture over fish. Broil for 2 to 3 minutes. Serve with steamed carrots in a butter dill sauce. |
