PUMPKIN DOUGHNUTS | |
2 tbsp. butter 1 1/4 c. sugar 2 eggs 1 c. canned pumpkin 1 tsp. vanilla 3 1/2 c. sifted flour 3 tsp. baking powder 1/2 tsp. cinnamon 1/2 tsp. nutmeg Blend butter and sugar. Stir in eggs, one at a time, beating well after each. Stir in pumpkin and vanilla. Sift dry ingredients. Stir well. Chill dough. Roll out on floured surface to about 1/2 inch thick. Cut doughnuts. Deep fry in hot oil about 375 degrees. Drain. Yields about 2 dozen. |
