TOMATO LEMON COULIS 
1 strip lemon peel, about 1 inch long
1 tbsp. olive or canola oil
1 med. onion, chopped
1 tsp. brown sugar
3 tomatoes, coarsely chopped
1/4 tsp. salt
1/8 tsp. pepper
1 tbsp. ketchup
2 tbsp. fresh parsley, minced
1 tsp. lemon juice

Using a vegetable peeler, remove the strip of yellow rind from the lemon. Chop rind finely. Heat the oil in saucepan. Add the chopped onion and lemon peel. Saute over medium-high heat until the onion is soft and transparent, about 5 to 6 minutes. Stir in the brown sugar and cook until it dissolves, about 1 minute. Add tomatoes, salt and pepper and ketchup. Reduce heat and cook for 10 minutes, until tomatoes are soft but not mushy. Stir in parsley and lemon juice. Put sauce in blender and puree until smooth. Spoon around salmon.

This is a very wonderful sauce, and unusual. It is great for the salmon, but just as good over broiled fish.
