HOT PASTA DELIGHT 
1 stick butter
1 tbsp. chopped garlic
2 bunches scallions and tops
4 firm med. tomatoes
1/2 lb. fresh mushrooms
2 tbsp. fresh parsley, chopped
1/2 tsp. garlic salt
1 c. grated Parmesan cheese
1 lb. fresh linguini

Chop scallions into 1/2-inch pieces. Peel and chop tomatoes. Slice mushrooms thin. Cook linguini in water, olive oil and salt.

Melt the butter in a large heavy skillet on medium heat. Add the chopped garlic, and stir fry for 1 to 2 minutes. Add the scallions, tomatoes, mushrooms and parsley.

Cook over medium heat just until the vegetables begin to slightly wilt, approximately 5 minutes. Add the garlic salt and Parmesan cheese, and toss in the cooked linguini. Keep tossing until the noodles are covered with the mixture.

Remove from heat and serve immediately. This dish can also be used as a side dish with beef or pork. Serves 4 as a main course.
