SAUSAGE AND SQUASH TORTE 
1-2 lbs. squash (zucchini or yellow)
2 eggs, beaten
1/2 c. cracker crumbs
1/4 c. chopped onion
1 lb. bulk pork sausage (if you like spicy foods, use the hot; otherwise mild)
1/2 c. Parmesan cheese

Chop squash into small pieces. Cook sausage and onion together breaking up sausage. Drain sausage; add squash and remaining ingredients - reserving 2 tablespoons of cheese for topping. Mix well and place in 9 inch pie plate which has been greased.

Bake in 350 degree oven approximately 40 minutes until firm and delicately browned. Cut in wedges and serve with a fresh green salad. Flavor is great as a left over too. Serves 4-6.
