CHEESY SCALLOPED CORN 
2 (17 oz.) cans cream style corn
2 c. (8 oz.) shredded Casino brand natural Monterey Jack cheese
1 1/2 c. cracker crumbs
1 egg, slightly beaten
1/4 c. chopped pimento
1/2 tsp. salt
Dash of pepper
2 tbsp. butter

Combine corn, 1 1/2 cups cheese, 1 cup crumbs, egg, pimento and seasonings. Pour into 10 x 6 inch baking dish. Top with combined remaining crumbs and butter. Bake at 350 degrees for 40 minutes. Top with remaining cheese and let stand 10 minutes before serving. Yield: 6-8 servings.
