6 oz. unsweetened chocolate 1/2 c. butter 4 lg. eggs 2 c. granulated sugar 1 c. all-purpose flour 2 tbsp. creme de menthe 1 c. coarsely chopped walnuts FILLING: 1/2 c. butter, softened 2 c. confectioners' sugar 2 tbsp. green creme de menthe GLAZE: 6 oz. semi-sweet chocolate 4 tbsp. butter 2 tbsp. creme de menthe Preheat oven to 325 degrees. Butter a 9 x 13 inch baking pan. Melt the chocolate and butter over hot water. Remove from heat, stir to blend and allow to cool somewhat. Beat the eggs lightly in a mixing bowl. Gradually add the sugar, beating thoroughly after each addition. Blend in the chocolate mixture. Sift and stir in the flour. Add the creme de menthe and walnuts; stir well. Spread the batter in the buttered baking pan and bake for 30 minutes. Remove from the oven and place the pan on a wire rack to cool. For Filling: Cream the butter, then add the sugar and the green creme de menthe. Mix until smooth, then spread over the cooled brownies. For the Glaze: Melt the chocolate and butter gently over low heat, over hot water, until almost melted. Remove from the heat, stir to complete the melting and then stir in the creme de menthe. Allow to cool slightly and then spread over the filling. Chill the layered brownies to set the filling and the glaze, then cut into 1 inch squares and await requests for "mo' brownies"! |
