POTATO PANCAKES 
3 med. potatoes
1 sm. onion
1/4 tsp. baking powder
1 egg
1/8 tsp. pepper
1/2 tsp. salt
2 tbsp. flour

Grate the potatoes and onion very fine. Drain to remove all liquid. Beat the egg slightly in a bowl. Mix the potatoes with egg and other ingredients. Heat a little shortening in skillet. Fry only a few pancakes at a time. Don't crowd. Flatten with back of spoon.

When bottom is crisp and brown, fry on other side. Serve with syrup or applesauce and meat.
