"PUB" ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
1 tbsp. vanilla
2 c. unpeeled grated zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
1 c. chopped nuts

Beat eggs. Add sugar. Add oil and vanilla. Sift dry ingredients and add by hand to egg mixture. Fold in zucchini. Do not over mix or beat; just stir together. Pour into 2 greased loaf pans. Bake at 325 degrees for 1 hour until pick comes out clean when inserted in center of loaves.
