ZESTY VEGETABLE RICE SOUP 
1 c. sliced celery
1 lg. onion, coarsely chopped
1 c. sliced carrots
1 lg. leek, sliced 1/4 inch thick and separated into rings
2 cloves garlic, minced
1/2 lb. sweet Italian sausage
1 tbsp. vegetable oil
1 (14 oz.) can tomatoes, coarsely chopped
2 (14 oz.) cans beef broth
1/2 c. uncooked rice
1/2 c. picante sauce
2 tsp. crushed basil

Brown Italian sausage. Drain. Set aside. Cook onion, celery, garlic and leeks in oil in large saucepan or Dutch oven. Add broth, tomatoes, carrots, rice, picante sauce and basil. Bring to a boil; reduce heat. Cover and simmer until rice is tender. Add sausage and heat 10 minutes.
