ZESTY CHICKEN `N RICE | |
4 chicken breast halves or 1 (2 lb.) chicken cut up 1/3 c. bottled Italian dressing 2/3 c. uncooked rice 1 bag (16 oz.) frozen broccoli, carrots, cauliflower, water chestnuts & red pepper 1 can (28 oz.) Durkee French fried onions 1 3/4 c. chicken bouillon 1/2 tsp. Italian seasoning Paprika Rinse chicken, place in 8 x 12 inch baking dish. Pour salad dressing over chicken. Bake uncovered at 400 degrees for 35 minutes. Place rice, vegetables and 1/2 can Durkee's onions under chicken. Mix bouillon and Italian seasoning over chicken, rice, vegetables. Sprinkle with paprika. Bake uncovered 25 minutes or until rice is tender and liquid absorbed. Sprinkle remaining Durkee's onion on top. Bake 5 minutes longer. 4 servings. |
