BEEF & BROCCOLI STIR FRY 
1 lb. round steak, cut in bite-size pieces
2 to 3 tbsp. vegetable oil
1/2 c. diced onion
1 lb. broccoli, cut in flowerettes
1/2 c. chicken broth
2 tbsp. soy sauce
1 tsp. cornstarch
4 med. tomatoes, cut into wedges
Rice

Brown meat and drain. Remove from skillet. Cook onion in oil and remove. Add onion to beef. Cook broccoli in oil. Add more oil if needed. Fry until partly tender.

Combine broth, soy sauce and cornstarch in small bowl. Add beef and onions to broccoli. Pour broth mixture over all. Stir. Simmer 5 minutes, covered. Add tomatoes and mix. Cook until tomatoes are just heated through. Serve on rice.
