MAPLE NUT COOKIES | |
2 c. flour 1/4 tsp. baking soda 1/4 tsp. salt 1/2 c. packed brown sugar 1/2 c. butter, softened 1 egg + 1 egg yolk (reserve white) 1/4 tsp. vanilla 1/2 tsp. maple flavoring 2 c. chopped pecans (or other nuts) In a large mixer bowl, combine all ingredients except chopped nuts. Blend together well and refrigerate dough. Roll chilled dough into 1-inch balls. Dip cookie bottoms into reserved egg white and then into chopped pecans. Place on lightly greased cookie sheets. These cookies do not spread much when baked. Bake in preheated 350°F oven for 10 to 12 minutes. Remove to cooling rack. Make a glaze of confectioners' sugar, water and maple flavoring (to taste) and glaze the cookies. Glaze will set up firmly after a short while. Makes about 24 to 30 cookies. |
