ORIENTAL CARROTS & GREEN PEPPERS 
6 carrots
1 tbsp. butter
1 tbsp. grated fresh ginger or powder
1 tsp. soy sauce
4 green peppers
1 tbsp. vegetable oil
1 tbsp. brown sugar

Cut carrots and green peppers into strips about 3". In a saucepan saute other ingredients except soy sauce. Next add the carrots and green peppers to mixture and simmer, covered for 10 minutes or until the vegetables are tender. Stir in soy sauce. Serve with broiled chicken and steamed rice.
