ONION SHORTCAKE 
1 sweet Spanish onion, white
1/4 c. butter
1 1/2 c. corn muffin mix
1 beaten egg
1/3 c. milk
1 c. cream-style corn
2 drops Tabasco
1 c. sour cream
1/4 tsp. salt
1/4 tsp. dill weed
1 c. grated sharp Cheddar cheese

STEP 1: Peel, slice and saute onion slowly in butter.

STEP 2: Meanwhile, combine muffin mix, egg, milk, corn and Tabasco. Place in 8 inch buttered square pan.

STEP 3: Add sour cream, salt, dill weed and 1/2 cup cheese to sauteed onion.

STEP 4: Spread onion mix over batter in pan. Sprinkle with remaining cheese.

STEP 5: Bake 25 to 30 minutes at 350 degrees.
