ZUCCHINI BREAD 
3 eggs
1 c. oil
1 1/2 c. sugar
1/2 c. honey
2 c. grated zucchini (or diced and shredded)
2 tsp. vanilla extract
3 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 c. chopped nuts

Makes 2 loaves.

Beat the eggs. Add the oil, sugar and zucchini. Mix well. Add vanilla and mix again. Sift dry ingredients together and fold into above mixture. Add nuts. Grease and flour two 9 x 5 inch standard bread pans. Divide the batter to make two loaves of bread. Bake 50 to 60 minutes.
