HUITRES CASINO 
12 oysters
1 tbsp. chopped green pepper
1 tbsp. melted butter
2 tbsp. diced pimentos
Juice of 1/2 lemon
2 slices bacon, cut into 1 1/2 inch strips
Dry bread crumbs

Open oysters and leave meat on deep half shell. Cook green pepper in butter, blend in pimentos and lemon juices. Cover each oyster with a piece of bacon and some of the seasoned butter. Sprinkle with dry bread crumbs. Bake in preheated oven (450 degrees F.) for 7 minutes. A bed of rock salt makes it easy to balance oyster shells on baking pan.
