OLD FASHIONED CORN BREAD | |
1 c. sifted flour 3/4 tsp. baking soda 1 tsp. salt 1 1/2 c. corn meal 2 eggs, well beaten 1 1/2 c. buttermilk or sour milk 3 tbsp. lard, melted Sift flour once, measure, add baking soda and salt and sift again. Add corn meal. Combine eggs, milk and shortening. Add to flour mixture and stir only until smooth. Turn into greased shallow pan and bake in hot oven (400 degrees) for 30 minutes. Note: Cracklings may be added to taste. |
