CHICKEN SCAMPI 
1 1/2-2 lb. boneless chicken breasts
2 tbsp. oil
1/2 c. flour
3-4 cloves garlic, chopped
2 c. white wine
1 tsp. lemon juice (fresh)
Dash salt
Bread crumbs

Wash and cut chicken into 1 inch cubes. In frying pan heat oil and garlic. Coat chicken with flour and saute in oil and garlic until color changes (do not brown).

Place chicken in baking dish. Add wine to cover chicken. Add lemon. Bake 20 minutes at 350 degrees. Remove and sprinkle top with bread crumbs and salt. Bake 15 minutes longer. Add a little water at a time, chicken should always be covered. Sauce will be bubbling and thickened.
