MICROWAVE PECAN BRITTLE 
1 c. pecan, halves & pieces
1 c. sugar
1/2 c. light corn syrup
1/8 to 1/4 tsp. salt
1 tbsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

Butter a baking sheet. In a 2-quart round deep microwavable casserole, place nuts, sugar, corn syrup and salt. Microwave, uncovered, at 100% power (700 watts) for 7 to 8 minutes or until golden brown, stirring after 4 minutes. Stir in butter and vanilla. Microwave at 100% power for 1 minute. Stir in baking soda and mix well.

Immediately pour onto baking sheet. Cool for 1 minute, then gently stretch candy with 2 forks to desired thinness. When cooled completely, break into pieces. You can also make this with all peanuts or a combination of pecans and peanuts.

Since microwave ovens vary in power, you may need to adjust your cooking time.
