OVERNIGHT REFRIGERATOR ROLLS | |
2 pkgs. dry yeast 2 1/2 c. warm water 3/4 c. soft or melted shortening 3/4 c. sugar 2 eggs, well beaten 8 to 8 1/2 c. flour 2 1/2 tsp. salt Soften yeast in warm water; add shortening, sugar, eggs, four cups flour and salt; stir. Then beat until smooth about 1 minute. Stir in remaining flour. This will be a soft dough. Cover tightly. Refrigerate overnight or until needed. Punch down dough, pinch off needed amount. Cover remaining dough and refrigerate. Shape into rolls, place in greased baking pan. Cover. Let rise in warm place for one hour or until doubled in size. Bake in 400 degree oven for 15 to 20 minutes. Turn out on wire rack. Yields 36 rolls. |
