MINI CHEESECAKES 
12 vanilla wafers
2 (8 oz. each) pkg. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs

Line small muffins with foil. Place 1 vanilla wafer in each cup. Mix cream cheese, vanilla, and sugar until well mixed (with electric mixer). Add eggs. Pour over wafer 3/4 full. Bake at 325 degrees for 25 minutes. Chill. Top with fruit, preserves, or chocolate.
