FRENCH ONION SOUP | |
2 tbsp. butter 2 medium onions, sliced 2 tbsp. flour 2 cans beef broth 2 cans water salt and pepper to taste 1 bay leaf 4 to 6 slices French bread (1-inch thick) 1/4 c. Mozzarella cheese (each bowl) Melt butter in pot and sauté onions until tender. Add the flour and cook for 1 or 2 minutes more. Add beef broth, water and next three ingredients. Simmer for 20 minutes. Toast French bread on both sides. Put bread in soup bowls and spoon soup over bread. Cover top of soup with Mozzarella cheese and brown under broiler. Yield: 4 to 6 servings. |
