JOSEPHINE'S MUSHROOM CHEESE
CASSEROLE
 
6 slices buttered bread, cubed
1 lb. fresh mushrooms, sliced
1/2 c. green pepper, chopped
1/2 c. onion, chopped
1/2 c. celery, chopped
1 egg
1 can cream of mushroom soup
4 oz. cheddar cheese, shredded
Salt & pepper

Saute mushrooms, green pepper, onion and celery. Preheat oven to 350 degrees.

In a buttered casserole dish, layer: 3 slices buttered cubed bread, sauteed vegetables and 3 slices buttered cubed bread. Beat egg and pour over top layer. Salt and pepper to taste. Pour soup over top in condensed form. Bake at 350 degrees for 1 hour. In last few minutes of baking add shredded cheddar cheese on top.
