PARTY POTATOES 
5 lbs. potatoes, peeled
1 stick (1/2 c.) butter
1 (8 oz.) pkg. cream cheese, softened
1 c. sour cream
1/2 c. grated Parmesan cheese
4 green onions, chopped
1 tbsp. salt
1/2 tsp. pepper

Boil potatoes until tender, mash while hot. Stir in butter and cream cheese. Add remaining ingredients and stir just to combine. Spread in 13 x 9 inch casserole or two smaller pans with equal capacity. If not serving within an hour, refrigerate. An hour before serving remove from refrigerator. Bake uncovered at 350 degrees 30 minutes. 10 to 12 servings.
