SWEET POTATO BREAD | |
3 c. sugar 3 1/2 c. flour 2 tsp. baking soda 1 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1 c. chopped pecans 1 c. vegetable oil 4 eggs, beaten 2 c. mashed sweet potatoes, cooked Sift dry ingredients in large mixing bowl. Make a well in the center; add nuts, oil, eggs, 2/3 cup water and sweet potatoes. Blend well. Bake at 325 degrees for 1 hour and 10 minutes. Bake in 2 small loaf pans that have been greased and floured. |
