ORANGE ZUCCHINI SQUARES 
1 c. sugar
1 1/2 c. unsifted flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
1/2 c. chopped nuts
1 c. grated & drained zucchini
2 egg whites, lightly beaten with fork
1 c. thawed frozen orange juice
4 tbsp. vegetable oil
1 1/2 tsp. grated orange peel

Mix dry ingredients together; stir in nuts and zucchini. To beaten egg whites, add the orange juice and oil. Fold into dry ingredients and orange peel. Spoon into greased and floured 9 x 13 x 2 inch pan. Bake at 350 degrees for 40 to 45 minutes or until toothpick inserted in center comes out dry and clean. Cool, cut into squares. Can be drizzled with thin orange icing if desired.
