HOT SAUCE 
6 tomatoes, chopped
1/2 c. onions, chopped
1 sm. pepper (jalapeno)
2 tsp. olive oil
1 tsp. vinegar
1 tbsp. lime juice
1/2 tsp. oregano
1/2 tsp. salt

Skin tomatoes and cut up. Add all other ingredients. Let stand 2 hours. After cutting up tomatoes, I always strain excess juice off.
