ZUCCHINI BREAD 
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
3 tsp. cinnamon
3 eggs
1 c. vegetable oil
1 1/2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
1 c. raisins
1 c. chopped walnuts

Mix flour, baking soda, salt, baking powder, cinnamon and set aside. Combine eggs, oil, sugar, zucchini and vanilla until well mixed. Stir in flour mixture until smooth. Stir in raisins and nuts. Pour into greased 13 x 9 x 2 inch pan. Bake at 350 degrees for 40 minutes.
