ZUCCHINI BREAD 
3 eggs, beaten
1 c. oil
2 c. sugar
3 tsp. vanilla
2 c. grated zucchini
1/2 c. chopped nuts
3 c. flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/2 tsp. baking powder

Beat eggs and add oil, sugar, zucchini, and vanilla. Mix in flour mixture and nuts. Pour into 2 greased bread loaf pans. Bake at 325 degrees for 1 hour or until done.
