MINTED PEA AND NEW POTATO SALAD | |
1 lb. sm. new potatoes, scrubbed 1 tsp. salt 1/4 c. vinegar (wine) 1 tbsp. vegetable oil 2 c. frozen baby peas (I use Seabrook) 1/2 c. mayonnaise or to taste 3 tbsp. minced fresh mint Bring potatoes to boil in cold water which covers potatoes by 2 inches. Then simmer potatoes 12 to 15 minutes or until tender. After the potatoes have been cooked and drained and while still warm, quarter them then in a bowl drizzle potatoes with oil and vinegar and add salt. Then toss. Cover and chill for at least 2 hours. Then add peas (thawed), mayonnaise and mint. Stir carefully. 6 servings. |
