SPINACH QUICHE 
1 unbaked pie crust
1 pkg. frozen chopped spinach, squeezed dry
3 tbsp. butter
2 med. onions, diced
8 oz. canned mushrooms, drained, or 1/2 lb. fresh mushrooms
2 tbsp. flour
8-12 oz. grated cheese (Swiss, Cheddar, Muenster, Mozzarella, any combination)
Salt and pepper to taste
1/2 c. milk
3 eggs

Saute' the onions and mushrooms in the butter until translucent. Mix them with all the other ingredients, and pour into the unbaked pie crust. Bake in preheated 350 degree oven about 45 minutes or until set.
