NEW - FANGLED CHILI | |
2 c. diced zucchini 1/2 lb. ground beef 1/2 c. chopped green pepper 1/2 c. chopped onion 1 can kidney beans (15 oz.) 1 (8 oz.) jar mild salsa 1/4 c. red wine 1/4 tsp. allspice 1 tbsp. tomato paste Sour cream, green onion, grated cheddar cheese Place zucchini, beef, pepper and onion in 2 quart saucepan. Saute over medium heat 7 to 10 minutes, stirring occasionally until vegetables are tender and crisp. Stir in salsa, wine, tomato paste and allspice. Cover and simmer 10 minutes. Stir in beans, continue cooking 5 minutes. Serve in bowls topped with grated cheese, sour cream and onions. Great for tacos or tortillas. |
