AUNT FANNY'S BAKED SQUASH 
3 lb. yellow summer squash
1/2 c. chopped onion
1/2 c. cracker crumbs (such as Ritz)
1/2 tsp. black pepper
2 eggs
1 stick butter, melted
1 tbsp. sugar
1 tsp. salt

Wash and cut up squash. Boil until tender, drain thoroughly, then mash. Add all ingredients except 1/2 of butter and cracker crumbs to squash. Melt remaining butter. Pour mixture in baking dish, then spread melted butter over top and sprinkle with crumbs. Bake in 375 degree oven for about 1 hour or until brown on top.
