CHOW YONG YOOK SI 
1/4 c. oil
1/2 tsp. salt
1 c. thinly sliced onions
1 c. diced celery
1/3 c. thinly sliced cucumbers
1 can mushrooms
1 lb. (4 c.) Chinese cabbage, coarsely chopped
1 tbsp. cornstarch
2 tbsp. water
1 c. coarsely chopped chicken
1 tsp. sugar
Dash of pepper
1 tsp. soy sauce (to taste)

Heat oil in large heavy frying pan. Add first 7 ingredients. Saute 2 minutes, turning constantly. Mix cornstarch and water until smooth and add with chicken to sauteed mixture. Continue cooking 10 minutes. Add remaining ingredients and cook an additional minute. Serves 6.
