LATKES 
4-5 potatoes
1 onion
1 to 2 beaten eggs
Pinch of baking powder
2-3 tbsp. matzo meal
Salt and pepper to taste

Grate potatoes (with or without skin). I hand grate, also onion. Drain very well. Add baking powder, salt and pepper. Keep mixture tightly. Pat latkes with paper towels but do not let them sit on the towel, or they will be soggy. Make sure they cook until golden brown.
