ARTICHOKE DIP 
1 can artichoke hearts, chopped (whole or pieces, but not marinated)
1 c. Parmesan cheese
1 c. mayonnaise
1/3 c. shredded Monterey Jack cheese
1/3 c. shredded cheddar cheese

Mix artichoke hearts, Parmesan cheese and mayonnaise together in small casserole dish. Sprinkle Monterey Jack and cheddar cheese on top. Bake at 350 degrees for 15 minutes. Serve warm with Triscuits.
