ARTICHOKE DIP 
1 can artichoke hearts (not marinated), drained
1/2 c. mayonnaise
1 c. cheddar cheese
Minced onion to taste

Cut artichoke hearts in small pieces. Add mayonnaise, cheese and onion. Mix together and top with crushed Ritz crackers. Bake at 350 degrees uncovered for 25 minutes. Serve with Ritz crackers or Triscuits.
