BACON AND TOMATO MUFFINS 
1 c. whole wheat flakes
2/3 c. tomato juice

Combine these two ingredients.

1 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt

Add to above bowl and mix.

2 tbsp. sugar
1 egg, beaten
2 tbsp. soft shortening
2 slices cooked crumbled bacon

Mix in together. Fill muffin tins (8 muffins 2 1/4 inch diameter) 2/3 full and sprinkle 2 more slices crumbled bacon on top. Bake 25 minutes at 400 degrees.
