POTATO BANNOCK 
2 1/2 c. sifted all-purpose flour
2 tbsp. baking powder
2 tbsp. sugar
1 tsp. salt
1/4 c. shortening
1 c. milk
1 c. potatoes, cooked, mashed and cooled
1 tbsp. milk or cream

Preheat oven to 450 degrees. In large bowl, combine flour, baking powder, sugar and salt. Cut in shortening until mixture resembles coarse crumbs. With a fork, stir in milk and potatoes. Transfer to lightly floured surface and knead gently 8 to 10 times. Work in a little extra flour if dough is too sticky.

Place dough on ungreased cookie sheet and pat with hands to form circle, about 1 1/2 inch thick. Divide bannock into triangular serving pieces by slicing dough 1/4 inch deep. Brush with milk or cream and bake at 450 degrees for 15-20 minutes, or until golden brown. Slice and serve hot with butter.
