GRANDMA'S BANANA BREAD | |
3 ripe bananas 2 eggs 1/3 cup corn oil 1 tsp. salt 1 cup sugar 2 cups all-purpose flour 1 tsp. baking soda OR 1 tbsp. baking powder 1 cup milk (fresh or soured with a bit of lemon juice) 1 tsp. vanilla extract (the real thing is nicest, but fake vanilla does fine) 1 tsp. ground nutmeg 1/2 cup walnut bits (if you like nuts) Healthy Additions (optional): 1 cup bran 1/2 cup milled flax seed 1 cup dried fruit mix or raisins These additions really change the character of the basic banana bread. I put the whole thing in a mixer or food processor and beat it a couple of minutes, no fancy sifting or mashing or any of that, and it works just fine. Bake in a greased and floured pan (or maybe two cake pans if you've done the additions) at 350°F for about an hour, check it at 50 minutes, usually done at 55 minutes if the oven temperature is right. If you live with bad ovens, as I did for years, just stick a broom straw or toothpick in the middle of the bread once it's risen and the top cracks a bit, watch for browning. The bread should be firm, no squishy middles allowed, and the broom straw should come out clean. Only a fool would let it cool, slice it up right away and feed starving family and whatever neighbors couldn't stand smelling it and not having some. Repeat often! Submitted by: Pennie Mumm |
