KOTOPOULO KAPAMA (Stewed Chicken
- Greek)
 
1 (3 lb.) chicken, cut up
1/2 c. butter
1/2 c. tomato paste, diluted with a little water
1 1/2 c. water, hot
1 tbsp. lemon juice
1 stick cinnamon
Salt & pepper

Wash chicken. Sprinkle with lemon juice, salt and pepper. Brown in butter. Put tomato paste and cinnamon stick in a Dutch oven; stir and bring to a boil. Lower heat and place browned chicken in tomato sauce. Cover and cook for 1 hour or until chicken is done. Discard cinnamon stick. Serve over spaghetti or rice pilaf.
