ZUCCHINI GOULASH | |
1 (8 oz.) can tomato paste 2 c. uncooked macaroni 1 lb. hamburger 1 med. chopped onion 3 c. sliced zucchini 1 (10 oz.) pkg. frozen peas, thawed 1 (8 oz.) can tomatoes 2 tbsp. flour 2 tsp. salt 1/2 tsp. pepper 4 slices cheese Cook and drain macaroni. Brown hamburger and onion. Drain off fat. Add zucchini slices, peas and tomatoes only, saving the liquid. Saute 5 minutes, stirring gently. Add tomato liquid with flour, mix. Add mixture, tomato paste and seasonings. Mix well and heat through. Pour into 2 quart casserole. Bake at 350 degrees for about 20 minutes. Remove from oven, place cheese slices on top and return to oven for about 5 minutes or until cheese melts. Serves 6 to 8. |
