SPARERIBS CANTONESE
4 lbs. pork spareribs
1 (12 oz.) jar orange marmalade
1/2 c. soy sauce
1/2 tsp. garlic powder
1/2 tsp. ground ginger
Dash pepper

Cut ribs in serving pieces. Arrange in 12 x 7 1/2 x 2 inch glass baking dish. Cover with waxed paper. Cook in countertop microwave oven 10 minute.

Drain off juice. Combine marmalade, soy sauce, garlic, ginger, pepper and 3/4 cup water. Pour over ribs. Microwave 30 minutes uncovered. Baste and rearrange ribs. Garnish with orange slices.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I used to cook these ribs in the navy. A great way we did them was to boil the ribs in a water/vinegar mixture first to seperate the meat from the bone. We would then bake them in the oven and keep basting the sauce on them. We used a ketchup and soy sauce mixture but the marmalade sounds delicious.
