SPICED BEEF 
Brisket of beef or eye of round roast
1/2 c. water
1/2 c. red cooking wine
1 c. consomme
1 chopped onion
1 glove garlic
1 red dried chili pepper (whole)
1/2 tsp. pickling spice
4 peppercorns

Brown beef to seal in juices. Add remaining ingredients. Cover and simmer 3 1/2 hours. Strain juices; use as au jus, if desired. Best served cold.
