HAM & EGG CASSEROLE 
1 c. cooked rice
6 boiled eggs, diced
1 c. thinly sliced celery
1 1/2 c. ham, diced
2 tbsp. chopped parsley
2 tbsp. chopped onion
1/4 tsp. salt
1 c. grated cheddar cheese
1 c. mayonnaise
1/2 c. milk

Combine all ingredients. Pour into greased casserole dish. Top with 2 cups crushed potato chips. Bake at 350 degrees for 1/2 hour. Good as a company breakfast dish! Serves 10.
