GRILLED ALASKA SALMON | |
Allow 1 lb. per person Salmon fillet 4 to 5 lb., fresh 1/2 c. butter 3 tbsp. soy sauce 3 tbsp. lemon juice 2 cloves minced garlic (can use garlic powder) A good substitute for butter is mayonnaise Prepare a roasting "pan" from heavy foil that will be large enough to hold the fillet (which may be left whole or cut into serving sizes). Place fillet skin side down in "pan". Meanwhile melt butter and combine with soy sauce, lemon and garlic. Drizzle mixture over fillets then place "pan" over grate (coals should be 5 or 6 inches from grate). Bank coals to both sides and place pan in center. Brush salmon well with butter mixture. Close barbecue lid and bake about 20 to 25 minutes until fish flakes with fork. Do no turn fish, when done lift fish to platter. Skin will stay on foil. |
