PEPPER STEAK IN A WOK 
1 lb. lean beef, cut into strips
4 tbsp. soy sauce
2 tsp. cornstarch
2 or 3 green peppers
Salt & pepper

Slice beef very thin and mix with half of soy sauce and cornstarch. Let marinate. Cut green pepper into strips and stir fry in the wok in a small amount of oil. Fry to desired softness. Remove from wok. Add more oil if necessary and quickly stir fry beef until red color disappears. Add green peppers, salt and pepper. Mix well. Add balance of soy sauce with a small amount of water and cornstarch to thicken and make gravy. Can add wine here. Serve with rice.

NOTE: Can be varied by adding sliced onions with the green pepper and add fresh chunked tomatoes when beef is done. Beef can be sliced thinly easier if it is frozen for a short time.
