BUBBLE AND SQUEAK 
3 unpeeled potatoes
1 chopped onion
Center cut ham slice
Pepper to taste
4 c. cabbage, chopped
6 slices bacon, chopped and browned, reserve fat

Cook potatoes in microwave until done. Cook cabbage in microwave until crisp tender. Cut ham into bite-size pieces. With potato masher, smash up potatoes (skins on) to bite-size pieces in large bowl. Add other ingredients (except reserved bacon fat) and toss. Heat bacon fat in large skillet, press mixture on top. Brown over medium-low to medium heat until brown on bottom, about 1/2 hour. Invert over serving platter to serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
