BRUNCH BAKED EGGS 
6 c. (or 24 oz.) grated Monterey Jack cheese
8 beaten eggs
1 3/4 c. milk
12 oz. sliced fresh mushrooms
1/2 c. flour
1/2 med. onion, chopped
1/4 c. thinly sliced red pepper
1/4 c. butter, melted
8 oz. cooked ham, in strips
2 tbsp. fresh herbs
1 tbsp. parsley

Get a 13 x 9 x 2 inch baking dish and spread half the cheese in it. Cook vegetables in a butter until tender only, drain and spread on top of cheese. Arrange ham over vegetables and spread the rest of the cheese over ham. Cover and chill. Combine eggs, milk, flour and herbs, pour this mixture over dish and bake 45 minutes at 350 degrees. Let stand 10 minutes before serving. Yield: 12.
